 Shokkan is a realization of my long-held aspiration of Washoku, Japanese style cooking, since I entered this world at age of nineteen.

 Theme is “Enjoyable Washoku”
I spent much time thinking about where to start “Enjoyable Washoku”

 I was looking for a place deliberately avoiding crowded places. But there were no fit for such a place and was hopelessly lost.

 Then I stopped by at this realtor and saw this place. It was in the center connecting Shibuya, Aoyama, Nishiazabu and Yebisu. An underground location on Roppongi Street with a small entrance but wide open space without view-hindering pillars. A valuable space.

 When people gather to eat, everything starts when you begin heading to the place to eat. This place appears when climbing up the hill leaving the hustle and bustle of Shibuya. Counters surrounding the open kitchen will gather guests to enjoy how their dishes are made from the very first step. I was convinced that this is the place.

 Cooking is “For everyone to share their good food” and “For us to create an unforgettable dish made up of ideas”. My quest is to explore and present profoundness of Japanese cooking to everyone around the world. And to accomplish these through unique ideas based on techniques and cultures learned in the world of Washoku and make it enjoyable to everyone in a comfortable space.

Someone asked me, "Do you want to open a restaurant at Tokyo Sky Tree?"
When I first heard of this offer, new ideas kept coming into my mind.

One of the first images that came to me was a memory of "Kamameshi; vegetable and meat on rice cooked in a small pot".
I used to work part-time at a restaurant during my high school years and the master would sometimes treat me with his special "Kamameshi" after its closing. It was warm, simply rich, tranquilly delicious, and most of all, filled me with joy and happiness.
At SHOKKAN in Shibuya, "Kamameshi" is being served in a big "Donabe; earthen pot", where everybody digs in to share happiness with one another.
At Tokyo Sky Tree, we created a personalized "Donabe" so that each "Kamameshi" can be arranged according to a person's preference.

We created "Kamameshi", which has always been at the center of Tokyo old downtown dining experience, to our main cuisine at new SHOKKAN bringing the past to present.

Mr. Shiomi; the interior designer has contributed in providing us with the perfect ambiance for the restaurant. He added forms and shapes to our concept, giving us a unique spatial experience with his excellent skills.Every single designing element is in place for our guests to be seated totally balanced. The full open kitchen counter enables our guest to see and choose the delights of our cuisine and having a heart-warming time with their families, friends, colleagues or special one.
We hope to deliver our delightful cuisine experience to as many people as possible.

“More enjoyable way to eat vegetables" is the concept for Tomato Miso.

Enjoy it with different kinds of season vegetables cooked in various ways.

Rice prepared and cooked in small iron pot just perfect for one person.

At Shokkan, we cook delicious rice of your choice.
White rice fresh from the oven top or rice cooked with ingredients to enjoy the seasonal delicacies.

“Passion for creation does not limit us to food but extend to all and everything related to cooking”

This passion inspired us to create our own set of plates based on an idea I’ve always had.

Japanese plates have many wonderful perspectives and we focused on the color. And to enjoy the most out of the color, we chose to have many colors of plates in same size and shape. By focusing on differences in colors, we thought it’ll expand the enjoyment of admiring Japanese plates.

These same size and same shape plates in various colors are collected from several potteries in Arita in support of Mr. Hara from Meikodo Pottery. We now have a collection of plates up to 10 different colors.
We are looking forward to meeting our next color to catch our eyes and adding them to our collection.

He possesses a deep understanding and passion in managing the restaurant business. His creativity is combined with his expertise in "discovery tokyo" since 2011, taking SHOKKAN to the global level.

Yuko has knowledge of world gourmet scenes and a passion for sharing her insight about Japanese food culture. She advises about the importance and the joy of cooking, eating and having a healthy lifestyle. Her vivid ideas can be found everywhere at SHOKKAN where people are brought together to enjoy delightfulness.

His pottery creation is a very powerful element for presenting any kind of food. His potteries can be found at SHOKKAN making your dining experience truly a discovery.

Shiro produced his original beer "KAGUA" that suits perfectly Japanese cuisine.
His beer enhances the delights of the SHOKKAN dishes and allows the people from all around the world to enjoy and discover the true WASHOKU; the traditional Japanese food.
